Our Story
I'm Ethan, a sushi enthusiast since childhood. My love for sushi led me to Tokyo during my studies, where I ate at a different sushi restaurant almost every day. Returning home, local sushi just wasn’t the same anymore. So, I began to teach myself the art of sushi, which is much easier said than done. After years of experience in Europe’s best sushi restaurants, my skills began to improve. Along the way, I encountered problems with the status quo, which inspired me to create the Kappa Kanpeki. Now, I aim to share my inventions, easing sushi preparation while honoring Japanese traditions that inspire me.

Kappa Kanpeki will work with most dense cylindrical vegetables: Cucumbers, Daikon Radish, Apples, Potatoes, Zucchini, and Eggplant are the most common we use it with, but feel free to test it with others! It is important that whatever you cut is firm and not too soft, otherwise it may be more difficult.

Kappa Kanpeki works best with single bevel Japanese style knives like Usuba or Yanagiba. However, it should work with any sufficiently long and sharp knife! Test out a few of your knives and let us know which works best!
